I spy with my little tastebud, something beginning with ‘C’________Cardamom; Carrot; Coriander; Chick peas; Cumin; Coconut Cream......Cosy!____________cardamom and carrot are like salt and pepper - they were meant for one another 🧡 _____ I’ve been cooking in the kitchen to deliver home-cooked plant-based meals and I always make sure to cook a little too much_______😋 I found that if carrot soup is overly spiced, you lose that carroty flavor....it’s all about finding the sweet spot! I add roasted butternut and sweet potato before blending the soup for a more creamy consistency____get creative with your spices, have some fun, fuck up if you must, save the day with coconut cream and extra carrots and then eat some lip-smacking sweetly spiced coconut creamy soup with roasted spiced chickpeas and fresh coriander! P.S I did not drop my phone in the soup whilst taking a picture this time! 👏🏻

I made these vegan sweet potato black bean burgers, and we loved them. Adee loved them. Everybody loved them! So I made them again.⠀ ⠀ And again.⠀ ⠀ And again.⠀ ⠀ You get the point. There are two really great things about these burgers. No wait. THREE!⠀ ⠀ 1) They're so easy. Minimized ingredients is the way to go!⠀ 2) They're healthy. Plant-based. Gluten-free. Nutritious!⠀ 3) They're SO delicious! The sweet potatoes and walnuts and black beans and spices all combine to make the perfect black bean burger!⠀ ⠀ I like to make a double batch...and then freeze half. ⠀ ⠀ Beans are my go-to fuel these days because they keep me feeling full. Nicecream for BREAKFAST! 👏👏👏⠀ Summer-ize your oatmeal with our Nicecream Oatmeal Superfood Sundae 🍨 ☀ Start with vanilla chia oatmeal, layer in warm berries, and then top it all with a giant scoop of Strawberry Banana Nicecream 😍 Delicious, filling and nutritious 💪🌿⠀ ⠀ Ingredients⠀ 1 cup rolled oats⠀ 1 tablespoon chia seeds⠀ 1 teaspoon vanilla extract⠀ 1 cup almond milk⠀⠀ 1 cup blueberries and raspberries⠀ 1 teaspoon chia seeds⠀ 1 teaspoon coconut sugar⠀ 1 pint Strawberry Banana Nicecream⠀ 1 tablespoon walnuts, for garnish⠀ 1 tablespoon cacao nibs, for garnish⠀ ⠀ 1. In a saucepan, combine the rolled oats, chia seeds, vanilla, and almond milk. Warm over medium heat for about 8 minutes and stir regularly.⠀⠀ 2. In a sauce pan, warm berries over medium heat, stirring often to avoid burning the berries. Then, add a teaspoon of chia seeds and stir well. Chia seeds will thicken the berry’s juices and make a kind of all-natural jam. Add in coconut sugar for a touch of sweetness.⠀ 3. Bring it all together! Do you guys mediate? I started about 8 years ago at the suggestion of my GI doctor for pain management. I then doubled down when I was pregnant because my high risk pregnancy was painful & stressful. I’ve been keeping up with it as a way to manage stress . I’ve never handled stress well and have definitely seen it effect my health. I’ve accepted that part of me and that I will always have to do something to help me manage . Meditation isn’t a magic pill that makes stress instantly disappear. It takes time, practice and patience to help you handle stress . There’s no wrong way to meditate and it just takes 5 minutes out of your day. breakfast casserole on repeat at our house . Recipe can be Whole30 with a few subsitutions. I prep the night before and just put in the oven the next morning since I’m NOT a morning person at all. It lasts for a few mornings at our house. . Ingredients 👉🏼 1 lb ground sausage 1 tbsp butter (use ghee to be Whole30 compliant) 5 cups of hash browns (I used frozen) 1 green pepper, diced 2 cups kale, chopped 1/2 onion, diced 10 eggs 1/2 cup milk (Use non-dairy to be Whole30 compliant) 1/2 tsp salt dash of pepper . Directions 👉🏼 1. Preheat oven to 350℉. Grease a 9x13 baking dish. 2. Brown sausage over medium heat. Drain and set aside on plate with a paper towel. 3. Add butter to pan and cook hash browns until lightly brown. Spread hash browns on bottom of greased baking dish. 4. Sauté green pepper, kale and onion until tender. Add this mixture over the hash browns in baking dish. 5. Whisk 10 eggs in mixing bowl with milk, salt and pepper. Pour this mixture into the baking dish. 6. Bake for 25-30 minutes. 7.
