Proulx reviewed their Emiliana Adobe Reserve Sauvignon Blanc, writing: “This was my favourite bottle on the table, straight up. The tropical fruit climbs out of the glass with nice intensity - passion fruit, pineapple and grapefruit. The savoury note is present, but it’s well integrated and buried under the fruit. Quench contributor Konrad Ejbich recently tasted several Canadian wines for his April article "Diversity is Strength". "Stylistically, aromatically, texturally and flavour-wise, each wine hit the double bull's-eye by representing its intrinsic nature accurately," writes Ejbich. "As a group, they clearly expressed the cool Canadian climate, young northern soils, regional nuances and ... outstanding overall wine making." Among the wines tasting was Melon de Bourgogne 2016 from @casadeawinery - one of the largest and longest running wineries in Prince Edward County. Adding a new sauce to your weekly meal plan is a great way to change up your usual flavours and add a little excitement for your palate. Chimichurri "I give credit to Simply Recipes for this one. Similar to pesto, this sauce originated in Argentina, and pairs well with beef and other meats." 1 cup firmly packed fresh flat-leaf parsley 3 or 4 garlic cloves 2 tbsp fresh oregano leaves (can substitute 2 tsp dried oregano) 1/3 cup olive oil 2 tbsp red or white wine vinegar 1/2 tsp sea salt 1/8 tsp freshly ground black pepper 1/4 tsp red pepper flakes Finely chop the parsley, fresh oregano and garlic (or pulse several times in a food processor). Place in a small bowl then stir in the remaining ingredients. Adjust the seasonings to taste. Serve immediately or refrigerate. If chilled, return to room temperature before serving. More and more people are choosing to reduce their gluten intake. This easy to make recipe will allow you to get your hands dirty without removing flavour. Check the pasta frequently when cooking and toss with a fresh pesto or light pan-fried cherry-tomato sauce. GLUTEN-FREE PASTA DOUGH 70 g corn flour (Masa Harina) 2 tsp psyllium husk powder 50 g white rice flour 50 g cornstarch 1 tsp salt 3 yolks + 1 egg 2 tbsp olive oil 1-2 tbsp water Rice flour for dusting Place all your dry ingredients in a mixing bowl and mix using the paddle attachment to aerate the ingredients. Slowly add the eggs, olive oil and 1 tbsp of water. Mix until thoroughly combined and transfer to your work space to knead. Knead until it’s soft and smooth, using rice flour to make sure it doesn’t stick. If the dough seems dry, add 1 tbsp of water until you get the proper consistency. If it’s too wet, add 1 tbsp of gluten-free flour of your choice. Roll into a ball and wrap in plastic wrap. Set aside at room temperature for 30 minutes. Roll out dough until you get a nice thin sheet and cut into noodles with a pasta maker or knife. Cook pasta as usual in boiling salted water. Keep an eye on it. Fresh pasta cooks quickly. Marcelo Morales is the winemaker at Corona de Aragón (Crown of Aragon). Between the 12th and 18th centuries, the Corona de Aragón spanned from eastern Spain to southern Greece. Morales and the team at behind the label infuse each wine with as much of the tradition as possible. It helps that the grapes are grown at higher than 500 m altitudes from over 40-year-old indigenous and international vines. Brothers Pascal and Jean-Marc Verhaeghe run Château du Cedre in Cahors. They are second generation winemakers, having taken over the estate from their father, Charles. Pascal handles vinification, grape breeding and marketing while Jean-Marc manages the vineyard. And they’re doing a good job at collaborating.
